{ The BEST Hearty Homemade Chicken Pot Pie Recipe! }

Happy Tuesday..not so happy really over on this end though. I've had a pounding headache as well as Mark for the whole day..boo!!! I guess along with the beautiful leaves & cooler weather comes the sinus headaches UGH! So to compensate for the headache I made some comfort food for us for dinner. I mean with the cold weather, leaves rustling about..it was just a matter of time before I whipped up some delicious homemade pot pie for dinner. This is the simplest recipe ever & bonus it's hearty & serves at least 6 , and  has a bit of an optional twist!! 
- Recipe

  •  1 box of pie crust
  •  1 can of potato soup
  •  2 cans of mixed vegetables
  • 2 cans of all white premium chicken { I like it because it's thin & shredded}
  • butter
  • 1 jar of gravy { Chicken or Turkey }
  •  salt & pepper { To your taste }
  •  3 tablespoons of 1% milk
  • Few pinches of cheddar cheese for topping { optional }

Combine all the ingredients above in a large mixing bowl { minus the butter }! Grab a pie dish & grease the bottom. Unroll your dough & place the first one down { you need to let the dough sit out room temp for at least 15 mins prior to unrolling }. Pour all the ingredients in & smooth out. Now take your butter & put 3-5 squares on top of the mixture & close shut with the other pie crust. Put a few slits in the top & bake at 380 degrees until golden brown. Serve with a bit of hot chicken or turkey gravy over top & a few sprinkles of cheddar cheese { My hubby loves his this way } ! Enjoy!!

I just love how simple & hearty this fall meal is! It's yummy & also budget friendly! With some ice cold milk it's definitely the perfect autumn dish for any family!!
